      Memorial Day Veggie Burger Recipe

      Memorial Day is first and foremost about honoring those who have died serving in the Armed Forces, but it is also time to gather with family and friends to share some love and laughter. It's time for sweet sunshine, lemonade, breezy sundresses, beach hair, bug bites, wildflowers, and staying out late under the stars, and it's time for barbeques, of course! But let's get one thing straight: barbecues and picnics can be epic even when there is no meat involved. We want you to enjoy the best plant-based food on this day and the rest of summer, so we prepared an ultimate veggie burger recipe you are sure to enjoy! What is more satisfying than a veggie burger? It's the perfect meal for the season and totally delicious. With all your outdoor adventures this summer, you are going to need plenty of protein to keep you going, so say hello to your new favorite veggie burger!

      Beet-Bean Cheeseburger

       Trade your beef for ingredients that are more beneficial for your health - yet just as tasty: Beets and Beans. These burgers are a particularly satisfying alternative to beef patties, but they are better for our bodies and the planet. Beet-Bean Cheeseburger is gluten-free, BIG on flavor, infused with smoky BBQ flavor, and perfect on the grill or stovetop, and best of all, it is really easy to make!

      Preparation: Active: 1 hr 15 mins; Total: 2 hrs 15 mins; Yield: 4

       

      Ingredients:

      • 3 cups (not packed) beet pulp (from juicing 1 1/2 pounds beets)
      • 2 cups (not packed) carrot pulp (from juicing 3/4 pound carrots)
      • 4 ounces small white mushrooms, quartered
      • 1/2 cup canned kidney beans, rinsed and drained
      • 2 ounces firm tofu, cut into 1/4-inch dice
      • 1 tablespoon canola oil
      • 1/4 cup cooked barley
      • 3/4 cup (not packed) celery pulp (from juicing 3/4 pound celery ribs)
      • 3 large eggs, beaten
      • 1/2 cup finely chopped roasted almonds
      • 1/2 cup freshly grated Parmigiano-Reggiano cheese
      • 2 tablespoons plain dry breadcrumbs
      • 2 teaspoons minced garlic
      • 2 tablespoons white miso
      • 1 teaspoon low-sodium soy sauce
      • 1/2 teaspoon Worcestershire sauce
      • 2 teaspoons kosher salt
      • 1/4 teaspoon pepper

       

      To finish:

      • Few dashes of Tabasco
      • 2 tablespoons unsalted butter, at room temperature
      • 4 hamburger buns, split
      • 2 tablespoons canola oil
      • 4 slices of Swiss cheese
      • Lettuce, sliced tomato, and stone-ground mustard, for serving

       

      Directions:

      Make the burgers:

      Step 1: Preheat the oven to 375°. Spread the beet pulp evenly on a parchment paper-lined rimmed baking sheet. Spread the carrot pulp evenly on a second parchment-lined baking sheet. Roast for about 30 minutes, stirring occasionally, until the pulp is dry and browned in spots. Scrape into a bowl and let cool completely. Leave the oven on.

      Step 2: On the rimmed baking sheet, toss the mushrooms with the kidney beans, tofu, and canola oil. Spread the mixture in an even layer and roast for 30 minutes, stirring occasionally, until browned and dry.

      Step 3: In a food processor, pulse the barley until finely chopped; scrape into a large bowl. Add the mushroom mixture to the processor and pulse until finely chopped; add to the bowl. Add the roasted beet and carrot pulp, the celery pulp, and all of the remaining burger ingredients and mix well. Pack the mixture into four 1/2-inch-thick burgers.

      Finish the burgers:

      Step 4: Heat a grill pan. Spread the butter on the buns and toast cut side down over moderate heat until golden, about 2 minutes. Transfer the buns to a plate.

      Step 5: Brush the grill pan with oil and heat. Add the burgers and cook over moderate heat, turning once, until nicely charred, about 6 minutes. Top each burger with a slice of cheese, cover, and cook until the cheese is melted, about 2 minutes longer. Set the burgers on the buns. Top with lettuce and tomato spread mustard on the top buns, and serve on eco-friendly biodegradable trays or plates.

       

      Notes:

      Don't forget to use only compostable and biodegradable dinnerware and flatware — no plastic or paper waste!

A unique cake can make any day better, and it's sure to add even more cheer to this special day, and it's sure to be your mom's favorite cake ever!
      This sweet, heart-shaped cake is easy to pull together, and it looks so gorgeous she will think you had it professionally made. Heart-shaped things have been a symbol of eternal love. A heart shape cake is no different. It reflects love in the perfect manner. With a touch of velvet, the cake becomes even more desirable. And by serving this heart-shaped Red Velvet cake on our fabulous eco-friendly heart-shaped plates, it is guaranteed it will be forever in your mom's memory.
       

      INGREDIENTS:

      • 2 1/2 cups all-purpose flour
      • 1 tsp salt
      • 2 cups of sugar
      • 1 cup butter softened
      • 2 eggs
      • 1 tbsp cocoa powder
      • 1 1/2 tbsp liquid red food coloring
      • 1 cup buttermilk
      • 1 tsp vanilla extract
      • 1/2 tsp baking soda
      • 1 tbsp cider vinegar 

       

      Cream cheese frosting

      • 16 oz. cream cheese softened
      • 1 cup butter softened
      • 2 tsp vanilla extract
      • 4-5 cups sifted confectioners' sugar

       

      DIRECTIONS:

      Cake

      STEP 1: Preheat oven to 350 degrees. Grease and lightly flour 2 or 3 round 9″ cake pans.

      STEP 2: Sift flour and salt together, set aside. In the bowl of a stand mixer, combine the butter and sugar. Mix until light and fluffy. Add the eggs one at a time. Mix well after each addition. Add the flour mixture to the bowl alternately with the buttermilk, beginning and ending with flour mixture. Blend in vanilla.

      STEP 3: In a small bowl, mix the 1 1/2 tbsp red food coloring and 1 tbsp cocoa powder until a paste forms. Add to the sugar and butter mixture. Mix well. In a small bowl or condiment cup, stir together the baking soda and cider vinegar. This will foam and should be put into the batter immediately after well mixed. After adding the foam mixture, blend at medium-high speed until the batter is consistent.

      STEP 4: Spoon batter evenly into pans – batter will be very thick! Level top of the batter with an offset spatula. Bake for 25-30 minutes, or until cake springs back when pressed in the center. Turn out on wire racks and cool completely.

       

      Cream cheese frosting

      STEP 1: In a large mixing bowl, beat the cream cheese, butter, and vanilla together until smooth. With the mixer on low, gradually pour in the confectioners' sugar. Increase the speed to high and beat until light and fluffy. If the mixture is too thick, add a little milk to loosen it. If it is too thin, add additional powdered sugar or put it in the refrigerator to firm up.

      STEP 2: If carving cake and coating with crumbs, be sure to put the crumbs on when the icing is fresh and still sticky.

      Delicious Memorial Day Cake

      Memorial Day is just around the corner, and for many of us, this long holiday weekend marks the unofficial start to summer and the organization of parties and picnics with your friends and family to commemorate the event. So this Memorial Day Weekend, welcome the official arrival of summer by creating an awesome blue, white, and red menu for your friends and family.
       
      Because you can't welcome warmer weather without a sweet treat (or two), we at Eco Party Warehouse have prepared delicious and fresh Berries and Cream Cake.

      Ingredients

      • 1 cup butter, softened
      • 1 cup sugar
      • 2 large eggs, room temperature
      • 2 cups all-purpose flour
      • 2 teaspoons baking powder
      • 1/2 teaspoon salt

      Filling:

      • 1/2 cup sugar
      • 4-1/2 teaspoons confectioners' sugar
      • 4-1/2 teaspoons cornstarch
      • 3 cups heavy whipping cream
      • 4 cups sliced fresh strawberries
      • 2 cups fresh blueberries
      • 2 cups fresh raspberries

      Instructions:

      Step 1: In a large bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder, and salt; gradually add to creamed mixture.

      Step 2: Line two baking sheets with parchment or greased aluminum foil; draw a 9-3/4-in. circle on each. Spoon a fourth of the batter onto each circle; spread evenly with a spoon to within 1/4 in. of edge. Bake at 350° for 8-10 minutes or until edges are golden brown. Remove wire racks to cool completely. Repeat with the remaining batter.

      Step 3: Combine the sugar, confectioner's sugar, and cornstarch. In a large bowl, beat cream and sugar mixture until stiff peaks form. To assemble, place 1 cookie layer on a large serving plate. Top with 1-1/2 cups whipped cream mixture and 2 cups of mixed berries. Repeat layers twice. Top with remaining cookie layer and whipped cream mixture. Arrange remaining berries on top. Cover and refrigerate for 4 hours.
